Grown on clay and decomposed granite on our Noordhoek Estate, this Sauvignon Blanc expresses mineral tones with structure and longevity. A combination of barrel and tank fermentation results in a nose that tends to show tropical fruit, citrus and some subtle herbal/khaki bush characteristics. With time this wine tends to show some oyster and brine characteristics, resulting in a fantastic mineral backbone to yield a wine which ages beautifully over 5 years. Enjoy with sushi, oysters, salmon tartar and seared tuna.View vineyard location
